Celiac patients don't gain weight.  That has been disproven by at least me.  I was 50 pounds overweight when I was diagnosed.  Originally celiacs were thought of as the children who were failing to thrive.  However celiac is being diagnosed later in life and it is found in thin and fat people and those in between.  It sounds like you are at one with your diet now and unfortunately are putting on the pounds like the rest of the US.  What works for my wife and I is to weigh each morning and if our weight went up the previous day then we ate too much or didn't exercise enough and we adjust accordingly for the next day or so to keep our weight in range.  My wife did this and lost 35 pounds over about 6 months and we record the end of the month weight too so there is a written record to look at too.  Just a small change in eating habits over time will make a big difference in weight.
You are probably gaining weight because your body is absorbing more of the nutrients and stuff since your intestines have healed.  I had never had high cholesterol until just recently-- maybe for the same reason.</description>

Yes, I think the guy who answered above me is definitely on to something.  I agree with him and can add some other thoughts as well.

Most gluten-free products are quite high in carbohydrates and sugar.  Eating such items will spike your blood sugar, when it comes back down (crashes) you will be VERY hungry.  Eating all that sugary stuff can make you process insulin in a less efficient way and gain much weight.

I avoid all of that packaged gluten-free stuff and all of the recipes with white sugar.

I still eat treats, I just make sure that they have some protein in them so that I don't crash and feel starving half an hour after I eat them.  

Try eating a lot more protein and don't forget the cookies; here is an easy gluten-free recipe for higher protein chocolate chip cookies:

Congradulations on your discipline, I am Celiac, too.
But I personally notice HOW HUNGRY I get whenever I consume anything (And most things are) made with Corn Syrup.  Then I overeat.  You'd think it was something safe, but I personally believe this is why so many Americans are Obese, and I think it's a dirty rotten shame the fast food people and canned goods people use it instead of sugar.
Hell, maybe it's a Commie Plot from the Red Chinese to weaken our bodies, minds and spirits, it wouldn't surprise me.
Maybe it's just the way we Celiacs handle Corn Syrup, even?</description>
